Cucumber Tea Sandwiches

The cucumber tea sandwich is a classic, but there are so many variations that you’ll never grow tired of this tasty treat! Try these great cucumber tea sandwich recipes for a satisfying snack at your next brunch or tea party.

One of the best tricks for making a cucumber tea sandwich is using very thin slices of cucumber. To achieve this, use a vegetable peeler instead of a knife!

Goat Cheese and Cucumber Tea Sandwich

  • 8 oz. soft goat cheese (softened, room temperature)
  • 3 tbs. parsley (finely chopped)
  • 2 tbs. tarragon (finely chopped)
  • 2 tbs. fresh chives (finely chopped)
  • 1 tsp. lemon zest
  • dash of black pepper
  • 24 slices cucumber (sliced very thinly)
  • 1 bunch watercress

    1.) Combine goat cheese with parsley, tarragon, chives, lemon zest, and pepper into a zip lock baggy and squeeze until well mixed.
    2.) Use a cookie cutter to cut out pieces of whole wheat, rye, or white bread.
    3.) Snip a corner of the bag and squeeze a dollop of filling onto each slice of bread.
    4.) Top with cucumber slice, pressing filling down, then garnish with a sprig of watercress.

    Cucumber, Smoked Salmon Tea Sandwich with Horseradish Butter

  • ½ cup butter (room temperature)
  • 1 tablespoon horseradish
  • 1 tsp fresh chives
  • 1 tsp fresh dill
  • dash of salt
  • cucumber, sliced very thinly
  • 4 ounces smoked salmon (or lox) sliced very thinly

    1.) Cut the crusts off 8 slices of bread. Combine the butter with horseradish, chives, dill, and salt. Mix well, and then spread onto each slice of bread.
    2.) Place one ounce of salmon on 4 of the bread slices.
    3.) Top salmon with cucumber and then another slice of bread. Press firmly together and then cut each sandwich into 4 squares or triangles.
